
With the talented food writer Mary Luz Mejia coming by to chat about maintaining a connection to her Colombian roots through food, this classic dish from the Pacific coast of Colombia seemed like a good choice. A version of Arroz con Pollo – chicken baked with rice – that’s found all across Latin America, Arroz Atollado is notable for its addition of Colombian chorizo, the distinctive Aliños seasoning paste for the chicken, and the plantain and avocado garnishes.
