Who doesn’t love a huge freakin’ burrito stuffed full of tasty? Exactly.
So that’s why I’m making some killer burritos this week —your choice of cochinita pibil-style pulled pork (slow roasted with sour orange & achiote) –or- buttercup squash, chard & black beans — stuffed into a flour tortilla with cilantro rice, refried beans, tomato, onion, lettuce, avocado, cheese, crema and chipotle hot sauce, and then grilled to give it a bit of golden crisp.
Get it straight-up or smothered (aka “wet” or enchilada) in salsa roja, a spicy red tomato and guajillo pepper gravy. Served with some crunchy tortilla chips & fresh pico de gallo.
