
Dan Dan noodles – the name is an onomatopoeia for the clacking of bamboo shoulder poles once worn by street vendors in Sichuan province. Leo lovingly recreates this robust, intriguing dish in which fresh noodles are tossed in a soy, sesame and home-made chili oil sauce, topped generously with spicy ground beef and Sichuanese pickles and garnished with herbaceous Sichuan pepper and green onion. Home-style stir-fried Chinese greens and tea will be served with the dish. Tart, refreshing smacked cucumber salad will be available. Vegan option available too!

Leo Moncel is a professional cook who has honed his craft at The Stockyards Smokehouse and Larder for the last two years. In September, he is beginning a 14 week position as a culinary extern at Terroni through George Brown College. Leo had the good fortune to visit Sichuan province in 2011, culminating a long-standing interest in the area and its food culture.
