Pop-Up Showcase for March: Cookie Martinez

Cookie is cooking up a amazing selection of Colombian street food favourites in March, featuring her special Patacon Pisao, a classic dish from the Colombian coast. Patacon are a hearty, crispy tostada made of flattened green plantain fried until crispy and served with beef, chicken or vegetarian toppings, avocado, cheese & special homemade criollo sauce. It is such a well-loved dish, there’s even a popular salsa song is named after it!

There will also be Cookie’s tasty beef, chicken or veggie empanadas, a delicious Colombian-style shrimp ceviche with orange and lime juice, tomato sauce, shaved red onions and cilantro, served with thin-cut plantain chips, a fresh avocado salad, and a yummy dessert too!

Cookie Martinez earned her name making delicious cookies, macaroons and brownies – including great vegan and gluten-free options – with an eye towards organic and local ingredients and creative South American flavours. She has also participated in innovative food projects like the Future Food Salon, creating a variety of dishes incorporating insects, and her spicy guava sauce recently won top honors at the Empanada Throwdown at the Ritmo y Color Festival at Harbourfront Centre.
