A bit of Toronto counter-culture history, this sandwich was the signature dish at Rochdale College’s vegetarian dining hall, Etherea, who also sold the sandwiches at events like the Mariposa folk festival. Emily’s veganized version is bulked-up with tempeh bacon made from Culture City‘s chickpea tempeh.
Fresh Ontario tomato, avocado, sprouts, and vegan mayonnaise, with your choice of house-made vegan cheeses — cashew mozzarella, or marinated tofu feta.
Served with potato-zucchini salad.
