Every Thursday has been inspired by the ingredients, spices and flavours of Costa Alegre, on the Pacific coast of Mexico.

Roast chicken with Secreto de Goyo spice rub and a casera red salsa made from roasted pasillo, arbol, pulla and cascabel chiles, with spiced pinto beans, lime & cilantro.
Spicy & sweet chili-rubbed roasted pork with pineapple, and topped with cilantro and lime

Roasted cauliflower, spinach with a dahl spread and panela cheese
Served with a side of totopos (tortilla chips) and pico de gallo (fresh tomato salsa)

Through groundbreaking restaurants like The Parrot, Stelle, Avec, Sarkis, The Spice Room and many others, his prescient embrace of this city’s multicultural flavours and ingredients revolutionized fine dining in Toronto, and foreshadowed the eclectic, international menus many now take for granted.
