
Nabemono (“things-in-a-pot” aka hot pot) is a traditional Japanese country food, with countless regional variations. This version comes from the cold northern province of Hokkaidō, and features salmon poached in a miso-based broth with noodles, tofu and vegetables, including daikon, cabbage, potato, leeks, corn, greens, and mushrooms, and accented with melted butter.
