All over Greece, delicate phyllo pastry encloses savoury and sweet ingredients in pies called “pita”. Katherine’s light & flaky phyllo bundles are stuffed with sweet potatoes and black beans brightly seasoned with lime and cilantro.
Cauliflowers and chickpea are popular ingredients throughout the Mediterranean. Katherine bakes her tender cauliflower in a crispy chickpea batter and serves it with a spicy smoked paprika aioli dip.
From Turkish şakşuka to Provençal ratatouille to Moroccan zaalouk, eggplants and tomatoes are old friends in this part of the world. This delicious side dish is fragrant with cinnamon and saffron, giving it a distinctive North African flavour.
