Catania, an Italian city on the east coast of Sicily facing the Ionian Sea, is the birthplace of this most iconic of all Sicilian dishes — Pasta alla Norma — supposedly named for the opera Norma by Sicilian-born composer Vincenzo Bellini.
Thick-cut chunks of roasted eggplant share the plate along with penne noodles in a homemade tomato sauce, topped with cashew ricotta and fresh herbs.
