Hoppin’ John is a rice & peas dish in the American South & Low Country, traditionally served on New Year’s Day. The origins of the name are uncertain; one possibility is a corruption of the Creole term for black-eyed peas: “pois pigeons”.
Served with a sautéed mix of the first local spring greens coming to market: spinach, ramps, fiddleheads, etc., and a savoury kimchee & tofu “bacon” or sun-dried tomato & rosemary scone. GF biscuits will also be available.
