
There are those of us who have been waiting all year for this – the arrival of the amazing, miracle-in-your-mouth that is local, vine-ripened heirloom tomatoes. When the tomatoes are this fantastic, you don’t really need, or want, to do much to them. Combined with a nice pasta, good olive oil, garden basil, fresh garlic, salt & pepper and you’re pretty much in spaghetti heaven. Side with a mixed bean salad – fresh green beans and cooked kidney beans with roasted veggies and capers, and you’ve got yourself the perfect late summer dinner.
