Jerusalem artichokes were later renamed ‘sunchokes’ possibly to avoid confusion from a Pilgrim’s innocent misnomer: they’re neither from Jerusalem or an artichoke.
Emily slices these bulbous artichokes into circles and combines them with mushrooms, leeks and vermouth over crispy rice and seaweed cake, somewhat like a sushi pizza or mini dolsot bibim. Each plate comes with garlicky edamame and adzuki (red) beans.
