
Cabbage patch stew is a old Texas recipe, perhaps influenced by the large influx of Germans in the 1800’s (also notable for their introduction of Bavarian beers and polka melodies into Tex-Mex/Norteño music). A cousin of chile con carne, this hearty dish adds sweet braised cabbage to the bean, tomato, chile and organic beef (vegetarian version available). Served with a side of “Texas Caviar” (black eyed pea salad), creamy corn grits and crunchy fritos.
