DROP-IN DINNER: Tortas Ahogadas by Katie Krelove

Translated as “drowned sandwiches”, Tortas Ahogadas are a renowned streetfood staple unique to Guadalajara, Mexico. The locals say the secret is in the durability of the bun, the sweet marinated slow roasted pork shoulder, and the mix of two sauces, chili-spicy and tomato-savoury, that do the drowning. Or maybe it’s in the toppings of lightly pickled onions, refried beans, avocado and lime. Who the hell knows, but my mouth is watering just writing these words, and you’ll find yourself craving more while still wiping the drippings from your chin. Katie Krelove is an educator and naturalist at the Nature Centre in High Park as well as an aficionado of Mexican street food.
