This warm, nutty salad showcases these tender shoots against a backdrop of toothsome farro, an ancient relative of spelt, also known as emmer. Together with green peas, fresh kale, some crunchy toasted almonds and topped with a delicious sprinkle of sheep’s feta cheese homemade at The Dep by Brad Kurtenbach, and a side of sweet corn on the cob, it’s a perfect way to slide into the start of summer.
