
The tradition of meals made of many small dishes for sharing is popular all around the Mediterranean. Spanish “tapas” and Catalan “pintxos” have become well known the world over, but Turkey has likewise cultivated a culinary tradition of small plates, known as “meze” for centuries.
The region of Izmir (known in antiquity as Smyrna), near the Agean Sea, with its close proximity to Greece, is especially well known for their cosmopolitan culture, lively music and fantastic food. With this lavish meal, Chef Murat Ozsuvari and Tolga Ay of M&T showcase a selection of over a dozen classic Turkish meze, accompanied by the traditional clarinet music of the region performed by Selcuk Suna.

Yaprak Sarma – Vegetarian vine leaf rolls stuffed with pine nuts, rice, mint and currants
Antep Dolma – Dried eggplants, peppers or zucchini, a speciality of the Antep region of Turkey, stuffed with beef, herbs and bulgur mixture
Sigara Boregi – Vegetarian Turkish cheese “spring rolls”
Acili Ezme – A spicy Turkish mixture of tomato paste, pepper paste and herbs
Piyaz – White bean, parsley and onion salad
Arnavut Cigeri – Fried liver with onions, parsley and potato.
Feta – Turkish brined cheese
Mercimek Koftesi – Lentil and herbs fritters
Saksuka – Eggplant and tomato salad
Fava – Broad bean purée with herbs and olive oil
Cerkez Tavugu – “Circassian” Chicken with walnuts, spices and butter

Chef Murat Ozsuvari studied cooking in Vancouver and has worked in restaurants around the world, including the Ritz Hotel in Miami, and the renowned Ara Café in Istanbul. Together with Tolga Ay, they have recently co-founded a new catering company Toronto, M&T Food Services, offering a broad range of Turkish-inspired and international foods for home delivery or events.
