Scotch Duck Egg
Duck egg encased in duck sausage, rolled in breadcrumbs and fried to a crispy golden crust.
Organic chicken, shredded and braised with collards
with rosemary, thyme and white wine, served with homemade pork-spiked baked beans and an apple, radish and dried cherry slaw.
Peach turnovers
with homemade strawberry ice cream.

Brad Kurtenbach is a Red-Seal-Ready cook-at-large, currently honing his craft at Westlodge. The founder of Kensington Organic Ice Cream, Brad was also the man behind the in-house dairy fermentation program at URSA (recently voted one of the top 10 restaurants in Canada). He has led several introductory cheese-making workshops at The Dep, and collaborated on our lavish Valentine’s Day Supper Clubs.
