Start with warm local and organic kale & spinach + 3 kinds of rice: chewy black “forbidden” rice, nutty red “cargo” rice & fragrant basmati rice, add corn, squash, quinoa, roasted sweet potato & red onion, drizzle with a balsamic vinaigrette, top with cranberries, almonds and crumbled feta (optional) and you’ve got yourself a one incredible dinner.
