Knives are the most important tools in any chef’s kitchen; in this fun, hands-on workshop you will develop the knowledge and confidence around knives needed to become a safer, more comfortable and efficient cook. We’ll start off with a basic introduction to the different kinds of knives and their uses and anatomy. There will be an opportunity to practice knife sharpening using a whetstone, sharpener and steel – an indispensable skill in a cook’s repertoire. Feel free to bring your own knives to class, and instructor Chef Sandra Bruton will teach you how to sharpen them.
The Thai-fusion menu highlights the use of various knife skills in a delicious way! The Thai Chicken Coconut Soup (Tom Kha Gai) provides an opportunity to understand how to break down a whole chicken into parts — a great skill and huge money-saver — as well as a chance to practice knife handling and grip on a range of fundamental cuts of carrots, onions and mushrooms. While the stockpot simmers, you’ll learn a colourful Thai Cashew Green Papaya Salad will provide tips and plenty of practice on finer cuts like julienning vegetables, chiffonading herbs, and mincing garlic and ginger.
