Welcome to the first ever Newcomer Kitchen menu offering!
Tonight our group of Syrian moms have prepared a traditional Damascene dish known as Shakriya, or “Thankfulness”. There are differing apocryphal stories about how it got its name, from the gratitude of the wealthy diners that could afford an such a rich, expensive dish, to the the man named “Shaker” (Thankful) who liked it so much that he asked his wife to make it every night. What we know for certain is that this is a very delicious dish, with large cubes of halal beef cooked with onions in rich yogurt sauce, spiced with fried minced garlic and mint.
There is also a lovely vegetarian option — not uncommon in a cuisine that traditionally has at least one non-meat day a week. Bamieh bil Zeit is baby okra are cooked with tomatoes, onions, garlic olive oil, and a squeeze of lemon.
Both dishes come accompanied by Roz bel Shairia, a classic combination of long grain Egyptian rice and golden shards of fried vermicelli noodles, and Salatet Malfouf, a cool, crunchy, tangy cabbage salad with lemon, sumac and pomegranate seeds.
For dessert, they’ve made Nammoura, a sweet, spongy, semi-soft semolina cake garnished with almonds and brushed with an orange-flower syrup.
Tonight’s meal is available in limited quantities. It is priced nominally at $18, but you are invited to pay whatever amount you are so inclined. Proceeds from the sales of these dishes help pay for all the ingredients prepared by the moms to take home to their families, with some left over to share amongst the cooks.
