The broth is simmered until the liquid has fully soaked up all of the flavour. They are the perfect way to embody South Asian comfort food and the Canadian instinct to reach for something fried and warm when the weather turns. \u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003e\u003cem\u003eSlow Cooked Lamb Shank with Kabuli Pulao\u003c\/em\u003e\u003cbr\u003e\u003c\/strong\u003eA decadent gift from Central Asia, this rice \u003cem\u003epilaf \u003c\/em\u003ehas become the national dish of Afghanistan. Through the migration and arrival of Afghan refugees in Pakistan, it became one of the most known \u003cem\u003epulaos \u003c\/em\u003ein that country as well. Pomegranate has travelled through many of the food cultures that inform this menu, so we use it here in the form of a \u003cem\u003egranita \u003c\/em\u003e(Italy's semi-frozen treat) as a reset before dessert.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eWarm Khoya Milk with Mille-Feuille\u003c\/strong\u003e\u003cbr\u003e\u003cem\u003eKhoya \u003c\/em\u003e(aka \u003cem\u003emawa\u003c\/em\u003e) is a concentrated dairy product made by slowly reducing milk until much of the water evaporates, leaving behind a dense, rich milk solid. \u003cem\u003eMille-feuille\u003c\/em\u003e comes from the French pastry tradition of laminated layers. Both are time-intensive to prepare and they each are rich in dairy. Ending on a warming note to prepare you for an early night's rest.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eSaunf Parcels\u003c\/strong\u003e\u003cbr\u003e\u003cem\u003eSaunf\u003c\/em\u003e (fennel seeds) are commonly offered after meals across South Asia, particularly in \u003cbr\u003erestaurants and homes. They are associated with freshening the mouth. Each diner will get their own parcel to take home. She trained at \u003cem\u003eLe Cordon Bleu London\u003c\/em\u003e and worked at the three-Michelin-starred Lecture Room at \u003ca href=\"https:\/\/sketch.london\/\" title=\"Sketch London\"\u003eSketch\u003c\/a\u003e, under Pierre Gagnaire. Alongside her kitchen work, she has spent years running her own South Asian food project, writing essays on the region's ingredients, techniques, and culinary history. Her work sits at the intersection of classical technique and South Asian food culture, covering food systems, culinary tradition, and the politics of what ends up on a plate. Born and raised in Karachi, and having lived and worked in four different countries on food, Wania loves to learn about food from its people, places, and politics.
