According to legend, Beef Wellington was created to honour Field Marshal Arthur Wellesley, the 1st Duke of Wellington, a British Army officer and statesman best known for his defeat of Napoleon Bonaparte at Waterloo in 1815, though he also twice served as Prime Minister of Great Britain. The classic Beef Wellington features beef tenderloin wrapped in a crisp, buttery pastry crust, a technique borrowed from the French filet de boeuf en croute, along with succulent accents such as mushrooms and duck pâté. The combination of luxury ingredients, technical skill, and dramatic presentation has made Beef Wellington into one of most iconic dishes in European fine dining.
Tonight, chef-turned-butcher, Peter Sanagan, owner and founder of Sanagan's Meat Locker, alongside Executive Chef Scott Draper, will share the rich history and skillful techniques involved in making Beef Wellington from (almost) scratch. Participants will each be guided on how to assemble their own small Wellington for two to take home, using top-quality Canadian beef tenderloin, prosciutto, mushroom duxelles, duck liver mousse, and puff pastry.
While your personal Wellington chills in the fridge, you'll be invited to sit down to enjoy a portion of freshly-prepared Beef Wellington along with a glass of whatever you care to bring to savour alongside this showpiece of British cuisine.
