Discover the craft and joy of making dosa (aka dosai/thosai) — South India’s iconic gluten-free, fermented rice and lentil crepes loved by so many around the world. Though they appear in every South-Indian state with their own regional variations, dosas share a common identity: delicate, nourishing, and endlessly versatile. This masterclass is your invitation to explore this culinary tradition from the ground up.

This is a hands-on workshop designed to deepen your understanding of gluten-free fermentation and elevate your everyday cooking. While sipping on a hot cup of chai and enjoying some freshly prepared snacks, you’ll learn how to work confidently with spices, understand the nuances of dosa batter, and master the techniques needed to create beautifully thin, golden dosas on a cast-iron pan. From ladling and spreading, to flipping and serving, you’ll get to practice making dosas yourself—supported by expert guidance, tips, and troubleshooting along the way.

A dosa is never enjoyed alone. To complete the experience, we’ll also demonstrate how to prepare classic South Indian sides that bring balance, texture, and flavour to the plate:

  • Aloo masala (potato filling)
  • Peanut chutney
  • Tomato-onion chutney
  • Coconut chutney

You’ll also learn how to to confidently work with spices and elevate your cooking skills with lots of tips and tricks during the class. You’ll leave with the confidence to recreate a full dosa meal at home. Every participant will take home a 16 oz container of freshly prepared dosa batter—your starter kit for continuing your dosa-making journey in your own kitchen.

Ekta Maheshwari is a  Chef Instructor at George Brown College, where she shares her passion for bread baking. She is also the Owner and Chef at Arth Toronto, a farmers’ market based business, where she celebrates slow-cooked, from-scratch dishes inspired by both - traditional Indian home cooking and Ontario’s vibrant seasonal produce. Her teaching style blends deep culinary knowledge with warmth, curiosity and a love for sharing food traditions. @arth.toronto
