Table Talks are an informal culinary salon hosted by The Depanneur. Every month we invite a local food personality to talk about something that interests them while Dep founder Len Senater cooks dinner.

Lynna Nguyen and Miriam Martens will be speaking about eat make share: a taste of immigration, which will be on display the Museums of Burlington from April 18 – September 5, 2026. This exhibit, from the Canadian Museum of Immigration at Pier 21 (Halifax), explores the connections between food and immigration in Canada through the universal experiences of eating, making, and sharing food. Lynna and Miriam will provide an overview of the exhibit and how it encourages communities to participate in learning and discussions.

Lynna Nguyen is Collections Manager at the Museums of Burlington, and Miriam Martens is the Manager of Events and Programs.

Tonight's menu take some inspiration from some of the stories and recipes in the eat make share exhibition, as well as kindred dishes featured in The Depanneur Cookbook.

Montreal style bagels with spruce tip cream cheese & elderberry capers
A hat tip to Indigenous Chef Jenni Lessard’s Spruce Tip Butter, a recipe developed for and featured in the exhibition, given a Montreal twist.

Stuart Sakai's Tuna and Tofu with seasonal green stir fry and short grain rice
A fourth-generation Japanese Canadian chef's tribute to his father's recipe, invented to to fill a yearning for Japanese comfort food using what he could find in Canada in the ’70s. Check out the recipe from The Depanneur Cookbook

Rebecca Teitelbaum’s Orange Cake with ice cream & marmalade glaze
Another recipe featured in the exhibition, this one secretly recorded by while imprisoned in a Nazi concentration camp. I've added a scoop of local vanilla ice cream, and a glaze from a marmalade recently made at a Marmalade Masterclass at The Dep.
